At the Food and Dairy Innovation Center, our mission is clear. We partner to drive food system innovation for societal benefit. This means that we don’t work alone. Instead we work directly with food processing partners to improve quality, reduce waste, and drive efficiency. Together, we seek novel solutions to some of the food industry’s biggest challenges.

Areas of Focus

Idaho is a major food producer.

The gem state ranks 1st in potatoes & barleys and 3rd in dairy. Massive food production also yields excess biomass.

As strong drivers of Idaho’s economy, these four areas comprise the foundation of the FDIC’s research, where committed partners + public & private funding opportunities allow us to work on quality improvements, process efficiencies, & byproduct valorization.
