Nicole’s Ground Turkey Lettuce Wraps

Prep Time – 10 minutes

Cook Time – 10 minutes

Total Time – 20 minutes

INGREDIENTS

1 Ib. Ground Turkey

1 Head of butter lettuce or romaine

2 Cups White Mushrooms

3 Cloves Garlic

1 tsp Fresh grated ginger

2 Green onions sliced thinly

½ Yellow onion

8 oz. Water chestnuts

¼ Cup Hoisin sauce

2 Tbsp Liquid aminos or soy sauce

1 Tbsp Olive oil

½ tsp Sesame oil

2 tsp Sriracha

1 Pinch Black pepper

INSTRUCTIONS

  1. Add olive oil to a large skillet over medium heat. Allow to heat for a few minutes, then add onion and cook for 3 minutes, then add mushrooms and cook for 3 more minutes. Add garlic and cook until fragrant.
  2. Add ground turkey to the skillet and cook until browned. Crumble ground turkey while it cooks. Once browned, drain excess fat and juice in a strainer and return to skillet after.
  3. Season with pepper, hoisin sauce, sesame oil, ginger, and sriracha. Combine together, then add water chestnuts and green onions. Cook for 3-4 minutes then remove from heat.
  4. Spoon a few tablespoons of the mixture into a lettuce leaf, and serve with shredded carrots, sliced bell pepper, rice noodles, or chopped toasted nuts.

For a vegetarian option, tofu can replace the turkey. It is best to freeze the tofu first to make it easy to crumble.

Assessments

The REC offers a variety of skill and fitness tests to assess your body’s health and ability.

Fitness Assessment
Duration: 60 minutes
Description: We use a series of resting and physical tests to determine a customer’s current fitness level. This includes resting heart rate & blood pressure. body composition, a movement screen, as well as strength, cardio, and flexibility testing.

Fee: $29-Member, $49-Non-member

Body Composition Appointment
Duration: 5-10 minutes
Description: We use skin calipers and a handheld machine to determine your body composition.
Registration: Service Desk
Fee: $5 for Members, $10 for Non-Members. Fee must be paid at the service desk prior to testing. Once you have paid, the Graduate Assistant for Fitness will be notified and he will schedule you an appointment.

Chat with a Trainer Program
Duration: 30 minutes
Description: This is a check-up for people who have questions about their current exercise and nutrition regimen. No tests, just a sit-down chat.
Registration: Service Desk
Fee: $15 for Members, $25 for Non-Members. Fee must be paid at the service desk prior to consulting. Once you have paid, the Graduate Assistant for Fitness will be notified and will schedule you an appointment.
